  • Best flavor: after 24 hours fermentation

Ingredients

  • 1 quart raw cow’s milk (fresh)
  • 1–2 tablespoons live milk kefir grains

Step-by-Step Instructions

  1. Combine milk & grains
Place kefir grains in a clean quart jar. Pour in raw milk and stir gently.
  2. Cover & ferment
Cover with cloth and secure with a rubber band. Leave at room temperature (65–75°F) for 12–24 hours.
  3. Check texture
Milk should thicken slightly and smell tangy when ready.
  4. Strain grains
Strain kefir into a bowl using a non-metal strainer. Save the grains for your next batch.
  5. Refrigerate & enjoy
Pour strained kefir into a jar, cap tightly, and refrigerate. Drink plain or flavor with fruit or honey.

Flavor & Use Ideas

  • Blend with berries for a probiotic smoothie.
  • Use in salad dressings or dips instead of buttermilk.
  • Ferment longer for a tangier flavor.

Troubleshooting (Quick Fixes)

  • Separation into curds & whey: Fermented too long. Stir and shorten time next batch.
  • Too sour: Stop fermentation at 12–18 hours for milder flavor.
  • Slow fermentation: Room too cold. Place near a warm spot (not hot).

FAQ

Do kefir grains die?
They’re living cultures. If not fed regularly with milk, they can weaken or go dormant.

Can I use store-bought milk instead of raw?
Yes, but avoid ultra-pasteurized. Low-temp pasteurized works better.

Can I reuse the grains?
Yes! Grains grow and multiply, giving you an endless supply. Share extras with friends.
