Quick Facts

  • Skill: Intermediate
  • Yield: ~1 lb mozzarella from 1 gallon milk
  • Active time: 30 minutes • Inactive time: none
  • Best flavor: enjoy fresh or refrigerate up to 1 week

Ingredients

  • 1 gallon raw cow’s milk (fresh)
  • 1 ½ teaspoons citric acid dissolved in ¼ cup cool water
  • ¼ rennet tablet or ¼ teaspoon liquid rennet dissolved in ¼ cup cool water
  • 1 teaspoon cheese salt

Equipment

  • Large stainless steel pot
  • Thermometer
  • Slotted spoon
  • Long knife
  • Microwave-safe bowl or pot of hot water
  • Rubber gloves (optional, for handling hot curds)

Step-by-Step Instructions

  1. Acidify the milk
Pour milk into pot. Stir in dissolved citric acid. Heat gently to 90°F.
  2. Add rennet
Stir in dissolved rennet using an up-and-down motion. Let sit undisturbed for 5 minutes.
  3. Check for curd set
Curd should be soft but hold shape when cut. Cut into 1-inch cubes with a knife.
  4. Heat curds
Slowly heat curds to 105°F, gently stirring to release whey. Remove from heat.
  5. Drain whey
Scoop curds into a bowl with slotted spoon. Press lightly to remove extra whey.
  6. Stretch the cheese
    • Microwave method: Heat curds 1 minute, drain whey, knead gently. Repeat in 30-second bursts until curds reach 135°F and become stretchy.
    • Hot water method: Place curds in hot (150°F) water and stretch with gloved hands.
  7. Shape & salt
Stretch until smooth and elastic. Form into balls. Sprinkle with cheese salt.

Flavor & Use Ideas

  • Slice for caprese salad with tomatoes and basil.
  • Shred for homemade pizza or lasagna.
  • Shape into braids or knots for fun serving.

Troubleshooting (Quick Fixes)

  • Won’t stretch: Curds not hot enough. Reheat to 135°F.
  • Rubbery cheese: Overworked or overheated. Stretch less next time.
  • Bland flavor: Add more cheese salt.

FAQ

Can I skip citric acid?
No — it’s what helps milk acidify quickly for stretching.

Can I freeze mozzarella?
Yes, but it’s best fresh. Frozen mozzarella works for melting but not for fresh eating.

Can I use goat milk?
Yes, though yield and texture may differ. Goat mozzarella is softer.
