❓ Sheet-Pan Dinner FAQ

What vegetables roast best?

Zucchini, peppers, onions, tomatoes, broccoli, green beans, carrots, and cauliflower all roast beautifully.

Can I prep this ahead of time?

Yes. Toss vegetables and protein with oil and seasoning, then store in a bag or container up to 24 hours in the fridge. You can also freeze it — just thaw before roasting.

Can I use chicken instead of sausage?

Absolutely. Boneless chicken thighs work best. Add about 5 extra minutes if pieces are large.

How do I keep veggies from getting soggy?

Don’t overcrowd the pan. Roast hot at 425°F and stir once so everything caramelizes instead of steams.

What should I serve with it?

Crusty bread, cooked rice, or a simple side salad. A squeeze of lemon and fresh herbs make it extra good.
