Raw Milk Ricotta (Simple & Versatile)
Ricotta is one of the simplest cheeses you can make at home, and it only takes milk, an acid, and a few minutes of your time. Fresh, fluffy, and lightly sweet, it’s perfect for pasta, baking, or spreading on toast with a drizzle of honey.

Quick Facts
- Skill: Beginner
- Yield: ~2 cups ricotta from 1 gallon milk
- Active time: 25 minutes • Inactive time: 30 minutes (draining)
- Shelf life: 4–5 days refrigerated
Ingredients
- 1 gallon raw cow’s milk (fresh)
- ¼ cup lemon juice or ¼ cup white vinegar
- ½ teaspoon salt
Equipment
- Large stainless steel pot
- Thermometer
- Slotted spoon
- Cheesecloth or clean cotton towel
- Colander
- Large bowl
Step-by-Step Instructions
- Heat the milk
Pour milk into a pot and slowly heat to 190°F, stirring occasionally to prevent scorching. (If you have already made mozzarella cheese, you can actually just heat the whey instead of using more milk) - Add the acid
Remove from heat. Stir in lemon juice (or vinegar). Milk should curdle immediately. - Rest
Let sit 5–10 minutes undisturbed while curds separate from whey. - Strain
Line a colander with cheesecloth over a large bowl. Pour in curds and whey. - Drain
Gather the cloth and let ricotta drain for 20–30 minutes, depending on desired texture. - Salt & store
Transfer ricotta to a container, stir in salt, and refrigerate.
Flavor & Use Ideas
- Stir into pasta or lasagna filling.
- Spread on toast with honey or jam.
- Use in cheesecake, pancakes, or muffins.
Troubleshooting (Quick Fixes)
- No curd formation: Milk not hot enough. Bring to 190°F before adding acid.
- Too dry: Drained too long. Next batch, shorten draining time.
- Too tangy: Vinegar adds more bite than lemon. Use lemon for milder flavor.
